Ask anyone above 60 and they will tell you: rice used to taste different. Richer, more aromatic, with a satisfying chew. The reason? Sun drying.
Before mechanical dryers existed, harvested paddy was spread on large open threshing floors and dried naturally under the Tamil Nadu sun for 2–3 days. This slow, gentle process allowed the grain to cure evenly, developing complex flavour compounds that rapid machine drying simply cannot replicate.
Sun-dried rice also parboils more evenly, resulting in harder, less breakable grains during milling. The nutrients from the bran layer migrate deeper into the endosperm during parboiling, making the final white rice more nutritious than its machine-dried equivalent.
